After a couple of days of searching, I found what I *think* I’ve been looking for!

Hubby used to make smoked sausage with rice and it was so creamy and yummy…this sounds PERFECT except that I think I’ll substitute cream of MUSHROOM soup for the cream of celery…you can never have too many mushrooms LOL

What do you think?

1 lb. smoked sausage, sliced
3/4 c. raw rice (NOT instant)
1 can cream of celery soup
3/4 c. water
1 tbsp. butter
1/4 tsp. salt
1 (3 oz.) can sliced mushrooms
1 c. cheddar cheese, grated

Combine sausage, rice, soup, water, butter, and salt in electric skillet at 350 degrees or heavy skillet on medium heat. Cover and bring to boil, reduce heat and simmer for 5 minutes. Stir in mushrooms. Sprinkle with cheese. Simmer covered for 15 minutes or until rice is done.
