Chicken Lo Mein

From the website, Jennie-O Turkey, with a few of my tweaks, or course.


8 ounces Lo Mein noodles
2 tbsp. canola oil
1 lb. chicken breast tenderloin, diced into 1-inch pieces
2 tsp. ginger
2 tsp. garlic
1/4 tsp. red pepper flakes
1 8 oz. bag of stir fry veggies
1 sweet red pepper, julienne sliced
1 sweet yellow pepper, julienne sliced
1/4 cup chicken broth
1/4 cup stir fry sauce
dash of soy sauce

Cook noodles according to package directions.  Drain and keep warm.

Meanwhile, heat 1 tsp. oil in deep skillet or wok.  Add chicken chunks and cook to 165* F.  I always use a meat thermometer and check a chunk to make sure!  Add ginger, garlic and red pepper flakes, continuing to stir fry for about 3 more minutes.  Transfer to bowl.

Add remaining oil to wok, toss in veggies and stir fry for 2 minutes.  Add broth, stir fry sauce and dash of soy.  Simmer.  Add meat and then add noodles.  Serve in shallow bowls.  Enjoy!
