Oven-Fried Chicken Tenders

1 pound chicken breasts

12 oz. can of evaporated milk

1 cup Japanese Panko bread crumbs

1 tbsp. garlic powder

1 tbsp. onion powder

1 tsp. salt

1 tsp. pepper

Cut up chicken breast into “tenders” and put in shallow dish.


Pour enough evaporated milk over tenders, enough to cover.  I used the entire 12 oz. can.


Cover and place in the refrigerator; let chicken marinate in evaporated milk for at least two hours.

Preheat oven to 375 degrees F.  Place three tablespoons of butter in baking dish; set dish in oven so that butter melts.

Mix Panko crumbs with seasonings in shallow container; drain chicken, one piece at a time and dredge in crumb mixture.

Add chicken to dish with melted butter.


Bake in oven for approximately 10 minutes; flip chicken and add two more tablespoons of butter.  Bake for 10 more minutes.


I was going to make smashed taters but the guys wanted macaroni and cheese instead.
