Roasted Sweet Potatoes

My husband and I love sweet potatoes. Our teen son loved them as a toddler but now he won’t touch them. The other evening I fixed a ham steak and made some roasted sweets and they were so yummy! Of course I had to make some “regular” potatoes for Daniel.


2 sweet potatoes

2 Russet potatoes

olive oil

cinnamon sugar


Preheat oven to 375 degrees F.

Peel and slice potatoes about 1/2 inch thick.  Brush olive oil on cookie sheet and place potatoes on cookie sheet.  Brush tops of potatoes with olive oil.  Sprinkle cinnamon sugar over sweet potatoes and then salt over all of the potatoes.

Bake in oven for 20 minutes.  Remove cookie sheet from oven and flip potatoes onto their other sides.

Don’t they look good already?  Place cookie sheet back into oven for another 15-20 minutes.  Watch them carefully because you don’t want to burn them.

I love sweet potatoes!  Thankfully they’re available year-round because they’re delish and good for you.
