Maple Mustard Chicken in the Crock Pot

This recipe comes to us courtesy of Chef in Training.  She suggests serving it over rice, quinoa or mashed potatoes.  There wasn’t enough rice in the pantry, so I made buttered potatoes.  They were the perfect side dish.  Okay, on to the recipe:


4 boneless chicken breasts

1/2 cup REAL maple syrup

1/3 cup stone-ground mustard

2 tbsp. quick-cooking tapioca

Since there are only three of us, I used just two chicken breasts.  They were nice sized breasts and I sliced them into smaller pieces so that (1) there would look like more and (2) they would cook quicker.

Spray the crock pot with Pam or another spray.  Toss chicken into the pot.

Blend the other ingredients.

Mix it well, so that you can pour it over the chicken.

It smelled so good and it hadn’t even cooked yet!  Pour over chicken, cover the crock pot and set on LOW for 3-4 hours.  Since my chicken was in smaller pieces, I set the timer for 3 hours.

Three hours was perfect.  The chicken was tender and juicy and sweet with a bit of tang from the mustard.
