Buffalo Chicken Casserole

Do you like buffalo wings?  We love wings, so when I ran across this recipe at Holy Cannoli Recipes, I decided to try it.  I changed a couple of things:  deleted the cheddar, used less chicken, dressing and potatoes and half the chicken soup.


3 cups of frozen hash browns (original recipe called for real potatoes, grated)

1 pound chicken tenders

1/3 cup buffalo sauce

2/3 cup ranch dressing

1/2 can of cream of chicken soup

OLYMPUS DIGITAL CAMERAPreheat oven at 475 degrees F.

Spray 9 x 13 pan with Pam cooking spray and spread potatoes on bottom of pan.  Lay chicken tenders on top of potatoes.  Mix up the remaining ingredients:  buffalo sauce, ranch dressing and soup.

OLYMPUS DIGITAL CAMERAPop into oven – uncovered – for about 45 minutes.  Check internal temperature of chicken; it should read at least 160 degrees.  Remove from oven and let rest for 5 minutes.

OLYMPUS DIGITAL CAMERAHmm, it was alright but my hubby wasn’t too crazy over it.  The teen had seconds.  If I ever decide to make it again, I might try it with blue cheese dressing (a whole cup) and see if it goes over any better.
