Mexican Hash

This is just something I threw together…I think I shall call it Mexican Hash, since it reminds me of corned beef hash.


1/2 pound hamburger (more or less)

1 small potato, peeled and diced

Dash of McCormick Onion Powder

Dash of McCormick Garlic Powder

Dash of McCormick Cumin (we call in comino in Spanish and it has to be in meat dishes for an authentic Mexican taste)

Dash of McCormick Cilantro Leaves (definitely needed in a Mexican dish)

Dash of salt

1 tbsp. canola oil

1/2 can Green Giant SteamCrisp Super Sweet Yellow & White Corn (save remaining corn for another meal)

1 can (10 ounces) Rotel Mild Canned Tomatoes and Green ChilesOLYMPUS DIGITAL CAMERAIgnore the second potato in the picture; once I had started, it was determined that one would be enough 🙂

Brown hamburger and spices in the canola oil over medium heat.OLYMPUS DIGITAL CAMERAAdd the potatoes, then stir in the Rotel Tomatoes and Chiles along with the corn.OLYMPUS DIGITAL CAMERALet the mixture bubble for maybe 8 minutes, until the potatoes are done, but not soggy.  Serve with cheddar to shred on top; I needed some sour cream since the dish was a bit spicy. OLYMPUS DIGITAL CAMERAI wish I had some pinto beans; they would have been an excellent addition to the dish, plus they would have taken away some of the spiciness, too.  Daniel couldn’t believe it when I told him we didn’t have a single pinto bean in the house.  Such a rare occasion 😦

It’s Wednesday.  Definitely Wednesday.

We had Chinese last night.  I was craving pork fried rice and it was so good.  Also had a bowl of wonton soup.  They make it so good – better than the other Chinese restaurant in town which only puts in about four wontons; this restaurant we went to last night puts in about five wontons and TONS of veggies and some meat, too.  Although my FAVORITE Chinese restaurant is in Springfield, nobody makes wonton soup like, they put in TONS of meat and veggies.  

Tomorrow is a big day for my ds:  he gets to read the petitions at church!  He practiced last night.  He stumbled over the word PRAYER.  I need to call about getting his speech evaluation and getting him started on speech again…poor kid.  He admitted the other day that he doesn’t like when people misunderstand him.


Okay, I’m back…just called the school district and they have completed testing (when I wonder?) and have an IEP Meeting scheduled for November 27 at 10 am!  I need to call dh and have him meet me there.

I’m doing laundry today.  Have finally finished folding my huge basket of unders and am now washing sheets from all the beds.  I swear that the sheets and pillowcases multiply around here.

I need to buy a laundry basket and get some of ds’s old clothes to a friend of ours; they foster children and are in the process of adopting their third, a boy.  They have had him since the beginning of the spring.  He’s 3 and he’s so cute.  They have another 3-year old and an 8-year old and two in high school.  ALL BOYS!  What a wonderful family they are.  I ran into the dad yesterday and asked if they would take the clothing and he said sure.  So I’ll run to the store on my way to pick up ds and grab a laundry basket.  

My mom invited me to lunch yesterday and we both had fried chicken.  And she’s invited me over today for carnitas and refried beans and fresh (!) homemade (!) tortillas!  I better be careful NOT to eat too much, I don’t want to gain back any of the 12 pounds that I’ve lost………….

Okay, off to Amity Mama to see how things are with the rest of my world.

Ummm, it’s Wednesday…I think?

This morning I took another nap.  I know I shouldn’t but I just felt tired.  Also I’ve been trying to catch up on folding laundry.  When you trip over laundry baskets in the bedroom, it’s time to fold clothes!

Afterwards, I went grocery shopping and did really good.  Only purchased what was on my list for once, haha!

Then I took my groceries home and went down Mom’s for a burrito.  Yum!  Tomorrow after my podiatrist appointment, we’re going to make posole.  Then after soccer, we are invited to her house for dinner.  I’m not sure that dh or ds will actually like it, but they are invited.  If they don’t want to eat it, they can go out on their own I guess.  Did that sound cruel?  I hope not….I would love it if they would both come have supper with us, but dh isn’t crazy about Mexcian food and neither is ds.  We’ll see.
