Asian Beef with Noodles

Tonight’s recipe was taken from Family Circle Magazine, December 2008.  I tweaked the recipe a LOT by not using ground beef; using sweet red and yellow peppers instead of a green pepper; using ground ginger instead of fresh; using green onions instead of scallions; using more stir-fry sauce – the original recipe called for just 3 tablespoons.  I’m a big tweaker, aren’t I?  Is tweaker a word?  It is now!

Ingredients:

One pound thinly sliced chuck steak, sliced into strips

If your meat is thawed, pop it into the freezer for about 30 minutes and that will make it easier to slice!

1 tbsp. canola oil

1 small sweet yellow pepper, julienned

1 small sweet red pepper, julienned

1 carrot, peeled into strips

2 tbsp. ground ginger

1 clove garlic, minced

4 green onions

1/4 tsp. red pepper flakes

1 tsp. white sugar

1/4 cup Teriyaki stir fry sauce

3 tbsp. lime juice (sorry, no fresh limes in the fridge tonight)

8 ounces thin spaghetti (I used the recommended Ronzini Smart Taste Thin Spaghetti)

Turn the heat on the wok on HIGH and add the canola oil.  When the oil is shimmery, add the beef strips and let them brown.

Add the spaghetti to boiling, lightly salted water.

The box said to boil for nine minutes; I boiled it for eight since it gets added to the wok and continues to cook for another minute or so.  After the meat is browned, add the veggies, red pepper flakes, ginger and sugar.

And, add the stir-fry sauce.

Drain the spaghetti and flop it into the wok.

Stir it all around and get all the veggies and meat mixed up with the noodles; this only takes a minute or two.  Then, put into serving dish and eat!

Oh, it was so good!  Hubby had seconds!  Daniel thought it was too spicy.  Next time, I told him I’d leave out the red pepper flakes and just put the jar on the table in case Ron wants to add it to his own plate.

Delish!  And the Ronzoni Smart Taste Noodles have 2.5 times the FIBER as regular spaghetti noodles.  I asked the guys if they tasted a difference between these noodles and the usual noodles they eat and they both agreed that there was NO difference.  Maybe I’ll use these again!
